Yellow tea is an exceedingly rare category, historically reserved exclusively for the Chinese Imperial family. Technically similar to green tea, it undergoes a unique "smothering" or "sealing yellow" step (menhuang): damp leaves are wrapped in parchment or cloth, allowing them to ferment slowly without oxygen. This process removes grassy astringency, resulting in a surprisingly mellow, sweet, and velvety flavor with notes of roasted chestnuts, corn, and honey.
