Unlike other teas, pu-erh undergoes microbial fermentation — which means it improves with age, much like fine wine. Shu Puerh (Ripe) — is a dark, thick, and rich tea. Its flavor profile is dominated by notes of noble earth, tree bark, roasted nuts, and dark chocolate.
Sheng Puerh (Raw) — is a light tea with high potential for long-term aging. It has a profile of dried fruits, meadow herbs, and a light floral bitterness that turns into a soft sweetness over time.
For the perfect taste, use water at 95–100°C. Be sure to "wash" the tea: pour boiling water for 5 seconds and pour it out. Then brew with short steeps of 10–20 seconds.
